How to get a transcript of any YouTube video (and 6 other sources)

Every YouTube video has words in it, but getting them out is harder than it should be. YouTube's built-in transcript panel is buried three clicks deep, can't be exported cleanly, and doesn't exist at all for many videos. Here are the practical options, from free to paid.
